NOTES: Excellent soup. Very hearty. I will be trying that one again. Try with more refried bean and a little less tomato in the future. Possibly use corn instead of olives. The olives were great, but they can be expensive. I’m finding it difficult to get my calories up and I don’t want that to cause a problem. I’ll see if a few days of rice will help. I’m enjoying the weight loss, but I don’t want to hit a wall quickly because I have been eating so few calories. Maybe I don’t need to worry about it yet. I’ll look into it.
